芡实有白芡实、红芡实、炒芡实三种,白芡实是剥去外皮的鲜品,新鲜易煮,但不易保存,需冷冻保鲜;红芡实是未去皮的干燥品种,药用价值更高,耐存放,却不易煮熟;炒芡实是经过炒制的药品,与生芡实相比,更长于健脾开胃。而生芡实以补肾为主。
